—— MEASUREMENTS 1 -2 tbsp of olive oil 1/2 yellow onion, diced 1/2 red bell pepper, diced 1/2 green bell pepper, diced 1 tsp minced ginger 3 garlic cloves, minced 1 tbsp of curry powder 1/2 tsp celery salt (or more to taste) 1/2 tsp cayenne pepper (more or less based on personal preference) 1/2 tsp fresh thyme Salt and black pepper to taste 2 cans of butter beans, drained and rinsed 1 13.5 oz can of unsweetened coconut milk (or 1 1/2 cup unsweetened original almond milk) 1 cup of vegetable broth 3/4 tsp better than bouillon vegetable paste (optional) 2-3 cups of leafy greens
